Taco Bell came out with these Doritos Locos Tacos a few months
back. What can get better than a taco
shell made out of Nacho Cheese or Cool Ranch Doritos?
I will admit, I did eat one of those Doritos tacos and loved
it, but didn’t love the calories. My
husband, Jeff, also loved the taco, but we both wanted a healthier way to eat
this delicious crispy treat without feeling so guilty.
I did search to see if I could purchase or even make the
Doritos Taco shell, but I came up empty.
An alternative would be to use the actual Doritios chips for nachos
instead. Even better, there are Baked
Doritios that have less fat and calories per serving and taste just as good.
If I was going to make the lighter version of the Taco Bello Dorito
Taco, I was going to try to make everything lighter.
I used ground chicken instead of ground beef, light sour cream, fat free beans, and light cheese along with
the other veggie toppings.
This was absolutely delicious! It was so good that Jeff and I licked the
bottom of the dish along with our fingers because of the nacho cheese on the
Doritos. Because of the layers, there
was a perfect amount of crunchy with cheese-drenched sogginess. Better yet, I didn’t feel like a lump the
rest of the day from eating this dish.
Loaded Baked Dorito Chicken Nachos
1lb ground chicken
1 packet Taco Seasoning Packet
1 can fat free refried beans
Light Con Queso dip
Light sour cream
1 small can of jalapenos, strained
1 avocado
Chopped cilantro
Chopped tomato
Chopped green onions
Cook your ground chicken until it is fully cooked with no
more pink. Add the taco seasoning
according to the package directions. Instead of using water for the seasoning, I
used lime juice as a replacement.
Heat the beans and con queso separately either on the stovetop
or the microwave. Warning - use a cover in the
microwave because they will explode.
Layer the chips with the chicken, beans, and con queso;
about three layers. This ensures that
toppings get full coverage and the Doritios chips get hit with a topping. On top, dollop the sour cream, jalapenos, tomato, cilantro, cubed or smashed
avocado and green onions. It doesn’t hurt to put more queso drizzled on the top
either.
This is best with a margarita and outside on your deck with
a friend. Mmmmm, my mouth in
watering. So good!
